Vodnjan, April 21, 2025 – In the heart of Istria, at Stancija Buršić, the 14th edition of the event celebrating Istrian gastronomic heritage – Vodnjanska špaleta – is taking place. This event, traditionally held on Easter Monday, gathers lovers of authentic flavors, music, and customs from the entire region.


Špaleta giravolta – a culinary gem of Istria


The main star of the event is špaleta giravolta, a cured meat delicacy prepared from pork shoulder, dried with the skin on, and enriched with the aromas of black pepper and olive oil. This special špaleta, consumed exclusively during Easter time, represents a symbol of preserving tradition and local production.


Rich gastronomic menu


Visitors can enjoy a variety of dishes prepared from špaleta, including pljukanci with špaleta sauce, cabbage, polenta with herbs, and fritaja with asparagus and spring onions. Homemade maneštra is offered at a symbolic price, all complemented by Istrian wines and desserts.
